You deserve something swanky and exotic if you are a mother or love and honor a mother.

Most of us have childhood memories of baking and cooking with our mothers and those who donā€™t have memories should create memories with their children and grandchildren and friends.

Bake my Vegan Delectable Pineapple Pear Cake for Motherā€™s Day for your mother or yourself. Pineapples are tropical while pears are from North America and create an intriguing fusion of ingredients.

It is light and fluffy and a luscious rendezvous for the mouthā€”akin to having dessert at a swanky restaurant instead expertly prepared by you in your own kitchen.

Ingredients:

Pineapple Pear Cake 4Ā Step Instructions 1 cup vegan butterĀ Ā Ā Ā Ā Ā Ā Ā Ā Ā Ā Ā Ā Ā  Ā Ā 1 cup sugar Ā 

2 1/2 tsp baking powderĀ Ā Ā Ā Ā Ā 1/4 tsp salt

1/4 tsp baking sodaĀ Ā Ā Ā Ā Ā Ā Ā Ā Ā Ā Ā Ā Ā Ā Ā 2 1/2 cups wheat flourĀ Ā Ā 

1 tbsp lime zestĀ Ā Ā  Ā Ā Ā Ā Ā Ā Ā Ā Ā Ā Ā Ā Ā Ā  Ā Ā Ā Ā Ā Ā 1 tsp pureed gingerĀ Ā Ā Ā 

1 cup grated pineapple 1 cup grated pear

drain excess moistureĀ  drain moistureĀ Ā Ā 

2 tsp vanilla

Prepare Cake Batter: Preheat oven to 350Ā°F. Oiled 9-inch cake pan needed.

Cream butter, sugar and salt for 8 minutes in bowl on medium speed. Slowly add dry ingredients to creamed butter. Add other ingredients and mix for 7 minutes on medium speed. Pour batter into an oiled, 9-inch round cake pan.

Bake Cake: Bake cake in 350Ā°F heated oven for 60 minutes until golden and springy. Test with cake tester which should be dry when removed from cake. Remove cake from oven, cover with foil and rest 30 minutes.

Remove Cake from Pan: Ease sides of cake away from pan with a spatula. Gently shake pan to loosen cake then. Remove cake from pan by turning over onto a plate.

Garnish with candied pineapple and pear slices and enjoy! Candy Pear & Pineapple: Drizzle 1 cup caramel over 12 pear slices and 12 pineapple slices and bake for 10 minutes in 300Ā°F oven. Pineapple pear cake is truly a heavenly, mouthwatering delicacy.
